The Sage Bee's Knees

It's hard to believe that Summer is already half way over...

These days, it feels like Summer could be endless and the cooler temperatures are nowhere in sight.

Still, I'm making the most of these hot, sunny days by enjoying a majority of my free time at the beach, and of course enjoying lots and lots of cocktails!

With the never-ending heat wave (temperatures are regularly reaching upwards of 38 degrees Celsius) my air conditioner can barely keep up.

So, instead, I thought I would keep creating lots of fresh, summery cocktails to help keep me cool throughout the season...Like this recipe for The Sage Bee's Knees!

I mean check out how delish this looks! The Sage Bee's Knees is made with freshly squeezed lemon juice adding a refreshingly acidic component to this drink.

Paired with gin and a sage simple syrup, this cocktail is perfectly balanced with citrus and herbs.

If you've read my other recipes, you might have realized that I love sage. It is SO fragrant yet when mixed with the right ingredients it adds a subtly herbaceous component that compliments practically any other flavour...

It also wouldn't be a "Bee's Knees" without a bit of honey, so I like to add a dash to this cocktail since the sage simple syrup makes this one sweet enough!

The Sage Bee's Knees
Per Cocktail

2 oz Gin
2 oz Freshly Squeezed Lemon Juice
1/2 oz Sage Simple Syrup
1 dash of Honey

1-2 Fresh Sage Leaves (for garnish)

Optional: Sparkling Water*

In a cocktail shaker, add gin, freshly squeezed lemon juice, sage simple syrup, and honey. Shake until the honey is well mixed. Pour ingredients into glass over ice. Garnish with 1-2 fresh sage leaves. Enjoy!

*On super hot summer days, I like to add a splash of sparkling water for a very refreshing kick!
